Mercimek köftesi is een typisch Turks recept. Ik maak ze graag als snackfood en als bijgerecht bij warm eten. Heel lekker om te eten met knapperig frisse ijsbergsla.

Mercimek köftesi

Dit is mijn basisrecept voor mercimek köftesi wat ik heb gefinetuned met tips van lieve vriendinnen. Je kan de mercimek köftesi ook glutenvrij klaarmaken. Je gebruikt dan quinoa in plaats van de bulgur. Bulgur is gestoomde, daarna gedroogde en fijngemalen tarwe. Wel is deze vorm van tarwe relatief laag in de glycemische index waardoor je suikerspiegel geen mega piek krijgt.  Tarwe eten is alleen niet zo goed voor mij dus een alternatief om mee te variëren is fijn.

Dit recept maakt tussen de 40 en 50 stuks mercimek köftesi.

Wat heb je nodig

  • 200 gram rode linzen
  • 450 ml water om de linzen in te koken
  • 250 gram fijne bulgur (koftelik) of 250 gram quinoa
  • 3 grote uien
  • 150 ml zonnebloemolie
  • 3 eetlepels (turkse) tomatenpuree
  • hand vol verse fijngehakte peterselie
  • hand vol verse fijngehakte dille
  • 1 citroen
  • 4 eetlepels granaatappelsiroop
  • 1 eetlepel pul biber, gedroogde chilivlokken (weglaten of verminderen als je niet van pittig houdt)
  • Volle eetlepel zeezout
  • Volle eetlepel zwarte peper uit de molen

Bereiding

Was de linzen tot het water helder is. Kook de linzen 10-12 minuten op een zacht vuur tot ze gaar zijn en het kookwater bijna volledig is opgenomen. Doe de bulgur/quinoa erbij en roer goed door. Deksel erop en laten staan terwijl je de rest klaarmaakt.

Gebruik je quinoa dan kook je deze met de linzen mee. Voeg dan 200 ml extra water bij. Mocht het kookwater niet volledig opgenomen zijn doe de linzen en quinoa dan even in een zeef om uit te lekken.

Hak de uien heel fijn, ik gebruik een hakmachine. Doe dit ook met de dille en peterselie, zet deze apart.

De uien ga je glazig bakken in de zonnebloemolie. Ik hou ervan ze echt een beetje door te bakken, dit geeft extra smaak. Daarna doe je de tomatenpuree erbij. Ik gebruik turkse tomatenpuree. In de supermarkt kun je geconcentreerde tomatenpasta kopen, die smaakt minder lekker in de mercimek köftesi.

Bak de tomatenpuree even een paar minuten met de uien. Daarna voeg je het zeezout, zwarte peper en chilivlokken toe. Roer het goed door.

Meng het uien- en tomatenmengsel met het linzen- en bulgurmengsel. Ik roer het grof door en ga daarna met mijn handen verder mengen. Als je voorzichtig om blijft scheppen koelt het ook vrij snel af.

Voor je de granaatappelsiroop, verse kruiden en het sap van de citroen kan toevoegen laat je het mengsel op kamertemperatuur komen. Kies een zo puur mogelijke granaatappelsiroop zonder extra toegevoegde ingrediënten, anders giet je nu pure suikerstroop in je kofta en dat is niet lekker. Je wil echt de granaatappelsmaak.

Ringen af, handen wassen en lekker doorkneden! De beste manier om alles goed gemengd te krijgen.

Nu ga je de kofta vormen. Pak in een hand wat mercimek köftesi mengsel, de hoeveelheid van een pingpongbal. Vorm deze in je hand door tegelijk met de ene hand te knijpen en de andere hand er op te drukken. De afdrukken van je vingers mogen er in staan.

Het vormen van de kofta is in een paar minuten klaar. Je eet ze koud, op kamertemperatuur. Wij vinden het lekker mercimek köftesi als bijgerecht of snack te eten met ijsbergsla en extra citroensap. De kofta blijft een dag of twee goed in de koelkast, wel even luchtdicht afdekken.

Mercimek köftesi is a typical Turkish finger food. I love to make them as a snack or side dish. They are really delishes with crispy lettuce.

This recipe is the result of a lot of finetuning. Thanks to my lovely friends who gave me tips like ‘use a lot of pomegranate sirop and lemon juice!’.

It is possible to make the mercimek köftesi free from gluten. You’ll need to use quinoa in stead of the bulgur. Bulgur is steamed, dried and finely ground wheat. It has a plus, this vorm of wheat has a low glycemic index. Your blood sugar won’t get a rollercoaster peak. But, eating wheat still upsets my tummy so the alternative of using quinoa is a godsend.

The recipe makes between 40 and 50 pieces of mercimek köftesi.

What do you need

  • 200 grams of red lentils
  • 450 ml water
  • 250 grams fine bulgur (koftelik) or 250 grams quinoa
  • 3 big onions
  • 150 ml sunflower oil
  • 3 tablespoons (turkish) tomato paste
  • a hand full fresh finely chopped parsely
  • a hand full fresh finely chopped dill
  • 1 lemon
  • 4 tablespoons pomegranate sirup
  • 1 tablespoon pul biber, dried chili flakes (leave them out of lower the amount if you don’t like spicy)
  • a heaped tablespoon sea salt
  • a heaped tablespoon black pepper from the pepper mill

Preparation

Wash the lentils until the water becomes clear. Cook the lentils in the water on a low fire until done. The cooking water will be almost gone. Add the bulgur, let it rest with the lid closed while you prepare the rest.

When using quinoa cook it with the lentils. Add 200 ml extra water. If the cooking water is not fully absorbed, strain the lentils and quinoa.

Chop the onions, dill and parsley very finely and put them aside.

Heat the sun flower oil in a skillet and fry the onions. I prefer to bake them until they almost start to brown. It gives extra flavour.

Add the tomato paste. I prefer to use turkish tomato paste. Tomato paste from the normal supermarkt is mostly concentrated and too sweet.

Bake the tomato paste for a few minutes with the onions. Add sea salt, black pepper and chili flakes and stir.

Mix the onion- and tomatomixture with the lentils- and bulgurmixture. I keep stirring until it’s coarsely mixed and proceed by mixing bij hand. It will cool quicker if you gently keep scooping.

Before you can add the pomegranate sirup, fresh chopped herbs and the lemon juice you need to cool the mixture. Room temperature is fine.

Choose you pomegranate sirup wisely. Don’t choose the version with a lot of added sugar. You really want the taste of pomegranate not a substitute.

Take your rings off, wash you hands and knead! This is the best way to get it all properly mixed.

Time to make the kofta. Take a bit of the mixture, like the size of a ping pong ball. Press it in your hand while giving pressure with the other hand. You want to see the print of your fingers in the kofta.

Forming the kofta usely takes a few minutes. Mercimek köftesi is eaten cold, room temperature. We like to eat them as a snack or side dish with crispy lettuce and extra lemon juice. Mercimek köftesi is preserved in the fridge good to eat for a day or two. Just cover them properly.
